I was chatting with my dad the other day about how to preserve the way of making those buns, since those shops, "the Old Chang's" & "the Old Chao's", have been there for like nearly 50 years and part of the common memory of Taipei residents. There was railways next to the shops as well as the old Chung-Hwa market. Immigrants from China after 1949 brought the old China life style and make it a unique market place for the so-called "outer citizen" (外省人). Nowadays those people are aging and dying, thankfully their Taiwanese sons and daughters have inherited and improved the skill, and still make the best steam bun in the world!
